Lone Star Buttermilk Biscuits

Ingredients

??2 cups (240g) all-purpose flour

??2 teaspoons (10g) baking powder

??? teaspoon (1.2g) baking soda

??1 teaspoon (6g) salt

??1 teaspoon (4g) granulated sugar

??? cup (115g) cold butter (you can freeze it for 20 minutes to get it really cold).

??? cup (180g) chilled buttermilk (or combine ? cup (180g) milk and 2 teaspoons (10g) lemon juice or white vinegar??et it sit for 5 minutes before using).

Instructions

1. Preheat oven to 425??(220??.

2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

3. Cube the cold butter and using a pastry cutter or two knives, cut the butter into the dry ingredients until the pieces of butter are pea-sized. Should look like coarse meal.

4. Stir in the chilled buttermilk, just until the dry ingredients are moistened. Be sure not to overmix the dough. Nothing ruins a biscuit more than overworking the dough.

5. You can choose to make drop biscuits by dropping large spoonfuls of dough onto a parchment lined cookie sheet. If you prefer to make perfectly round biscuits, lightly dust a surface with flour, drop the dough onto the flour, and knead very lightly 2?? times (remember, don?? overwork the dough).

6. Roll the dough out to a ???(1.27cm) thick rectangle. Using a biscuit cutter or a glass dipped in flour, cut out the biscuits. No need to twist the cutter, just push it straight down.

7. Place the biscuits on a greased or parchment-lined cookie sheet, and bake for 14??5 minutes.

Yields about one dozen biscuits.
